In an interview with Gazeta.Ru, the expert notes that the current margarine is actually healthier than butter.
He says: “The harm of vegetable oil is due to the method of its production – hydrogenation or hardening of liquid vegetable oils. Because as a result of this process, unsaturated fatty acids are formed that cause cardiovascular diseases. These ingredients need to be limited or they need to be completely excluded from the diet. But today, vegetable ghee is produced differently, as new technologies reduce the content of trans isomers (trans fats) in ghee to a safe 2 percent, while butter contains natural isomers, composition which is associated with the peculiarities of animal nutrition, since their percentage in oil can reach 8 percent.
According to him, if manufacturers learn to work with synthetic transomers, then it is impossible to remove natural transomers from the product. Therefore, the myths that margarine-based desserts contain a large amount of trans fats are untenable.
And he says: “If we compare the health effects of modern margarine and butter, then preference will be given to vegetable margarine. First, because it does not contain trans fats, cholesterol and saturated fats, which modern medicine recommends limiting. Secondly, vegetable oil margarines contain healthy unsaturated fatty acids, have a positive effect on cholesterol levels and prevent a number of cardiovascular diseases.
The expert notes that this does not mean abandoning the use of butter in the diet. Because the main thing is the need to observe the principle of moderation in everything.
